We've added one of the world’s most coveted culinary collections to our portfolio: authentic Japanese Wagyu sourced directly from Japan’s prestigious annual auction in Kyoto. 

Tommy Hall and Executive Chef Matthew Niessner were among just 16 Americans invited to attend the exclusive event. There, the duo personally selected our exclusive reserve of premium A5 Japanese Wagyu, sourcing exceptional cattle from three distinct prefectures: Yamaguchi, Hokkaido and Kagoshima. 

This exclusive collection will be showcased through a series of upcoming dining experiences, starting with the launch at Halls Signature Events:

From Auction to Table: Halls Wagyu Experience

In development for almost a year, this special evening will showcase Halls’ private collection of the finest Japanese wagyu personally procured by Tommy Hall and Chef Niessner at the exclusive Himeji World Auction in Japan. Hailing from three distinct Japanese prefectures, each featured Wagyu presents a unique flavor profile and texture. Chef Niessner and our culinary teams from Halls Chophouse, Halls Catch, High Cotton, SNOB and Halls Signature Events will explore the unique nuances of each Prefecture’s Wagyu—beef that has never before been served in Charleston. The evening will include Japanese-inspired cocktail pairings, storytelling, cooking demonstrations and more to create an inspired culinary experience that presents Japan’s finest beef through the unique lens of Hall Management Group restaurants.
